FIELD: food industry.
SUBSTANCE: invention is related to dairy industry. The method involves addition of a biologically active substance represented by homogenised salmon fish milt and a starter to normalised milk, ripening and chilling. The milt is preliminarily salted in a spice-and-salt solution for salt content in milt to be 8% and taken in a quantity of 30-50% of the preliminarily pasteurised milk weight. Before ripening a rennet and potassium or calcium chloride are added to the produced mixture of milk, biologically active substance and starter. The rennet and potassium or calcium chloride are added in an amount of 0.0001% and 0.04% of milk weight accordingly.
EFFECT: invention allows to increase nutritional and biologic value of the product providing for its organoleptic qualities improvement.
