FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Goat milk is pasteurized. 40% solution of calcium chloride, rennet and starter of Streptococcus thermophilus, Lactococcus lactis and Bifidobacterium lactis in the amount of 3-5 % of the volume of milk are introduced. Mixture is stirred until curd is formed and then ultra filtrated. 806 kg of filler, which is pumpkin puree in the amount of 150 kg and lactulose syrup in the amount of 50 kg at the ratio of 3:1, is added to produced quark. It is then mixed, cooled and delivered for storage. Initial components are expressed in kg per 1,000 kg of the product.
EFFECT: invention allows to manufacture a quality combined polyfunctional product with increased biological value and improved organoleptic properties.
