FIELD: food industry.
SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. One performs preparation of the recipe components, extraction of flavoured vegetable raw material envisaged by the method versions with liquid nitrogen to separate the appropriate miscella. Dandelion roots and rosehips are cut, dried in microwave field at specified parametres of the process. Dandelion roots, barley grains, acorns, nut kernels, fruit bones and soya are fried. Rosehips are additionally dried by convective method; dandelion roots, rosehips, barley grains, acorns, nut kernels, fruit bones and soya are mixed. The produced mixture is impregnated by separated miscella with simultaneous pressure boost and pressure release until it equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: methods make it possible to produce new flavoured coffee drink and also provide for improvement of organoleptic properties of drink due to its enrichment with extractive substances of miscella and their preservation.
