FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular - to flour products production and may be used in the process of baking bread and bakery products. In accordance with the method removal of hardness salts, organic impurities and heavy metals from water is performed by water boiling with vegetable sorbent agents. The sorbent agent is represented by desiccated fruit. After boiling the decoction is cooled to a temperature of 5-15°C, then waste dried fruit is removed from the decoction, the decoction is filtered, the filtered water is conditioned to a temperature of 28-35°C and used for dough or brew preparation. The base for the vegetable sorbent agents preparation is represented by dried apples, dried apricots, dried grapes (raisins) and a mixture consisting of dried grapes, dried apples, dried apricots.

EFFECT: method ensures high quality water conditioning related to purification of water which is used in the process of bakery products production and its enrichment with biologically active components for manufactured products quality improvement.
