FIELD: food industry.
SUBSTANCE: invention relates to food industry and refers to soluble micelles of whey protein the size whereof is less than 1 mcm; the micelles are represented by spherical agglomerates of denaturised whey protein; whey proteins are localised in such a manner that their hydrophilous parts are orientated towards the outside part of the agglomerate while the hydrophobic parts - to the inside "core" of the said micelles; additionally the invention refers to soluble micelles of whey protein in the form of a concentrate and a powder and their application in consumable products and such products production methods.
EFFECT: invention may by used in emulsifiers, fat substitutes, substitutes of micellar casein or foaming agent; it allows to produce products enriched with protein, with a whitening/opalescent effect, a reduced fatness; the invention allows to impart a creamy texture to the products and a creamy gustatory sensation in the mouth.
