FIELD: food industry.
SUBSTANCE: invention relates to food industry. An oil encapsulant component containing an active encapsulant susceptible to heating and dissolved and/or dispersed in oil is mixed with a water component and a film-forming component such as protein to produce an emulsion. The emulsion is mixed with the matrix material to produce a mouldable mixture or dough. An acid antioxidant serving to prevent oxidation of the easily oxidable susceptible encapsulant and a plastifier dissolving the acid antioxidant are included in the matrix material encapsulating film-coated oil drops containing the easily oxidable component. The plastifier (such as glycerine) ensures mobility of the matrix material acid antioxidant for reaction with atmospheric oxygen and cacodorous amines.
EFFECT: invention enables production of discreet solid granules (stable in the course of long-term storage) that contain an encapsulated component, susceptible to heating or easily oxidable.
