FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved compotes production. The method provides for recipe components preparation, cutting scorzonera, drying it in microwave field as preset process parameters, frying and cryomilling in liquid nitrogen, frying barley grains and soya. Scorzonera, barley grains and soya are mixed; the produced mixture is extracted with drinking water at preset process parameters. The obtained extract is filtered, syrup is made on its basis. Peaches and produced syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
