FIELD: food industry.
SUBSTANCE: invention relates to production technology of canned compotes. The method of production includes preparation of the recipe components, cutting oyster plant, its drying in microwave field at preset process parameters, frying and mincing. Barley grains and soya are roasted; oyster plant, barley grains and soya are mixed. Obtained mixture is extracted with drinking water at preset process parameters. The obtained extract is filtered, syrup is made on its basis. Pears and produced syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
