FIELD: food industry.
SUBSTANCE: in accordance with the method proposed one produces a beet sugar solution containing beet molasses and malodorous volatile substances including pyrazines by way of one or more purification methods. The said beet sugar solution is subjected to electric dialysis to produced an electrically dialysed liquid wherefrom the malodorous volatile substances have been removed at least partially. Extracted from the said electrically dialysed liquid is a product selected from liquid and solid brown sugar products and combinations thereof. Additionally, the invention relates to beet sugar based food products produced from the beet sugar solution.
EFFECT: this group of inventions enables production of food products capable to substitute for corresponding products produced from cane sugar.
