FIELD: chemistry.
SUBSTANCE: invention relates to oil-in-water emulsion. The invention discloses oil-in-water emulsion in which oil droplets with diameter ranging from 5 nm to several hundreds of micrometres exhibit nanosize self-structuring with hydrophilic domains having diameter ranging from 0.5 to 200 nm, caused by the presence of a lipophilic additive, where the oil-in-water emulsion contains an active element in amount of 0.00001-79% of the total weight of the composition.
EFFECT: invention enables to obtain oil-in-water emulsion in which dispersed oil droplets exhibit self-structuring which is used to stabilise or disperse active elements such as nutrients, medicinal agents, flavours or chemicals in order to endow new or improved functionality.
