FIELD: food industry.
SUBSTANCE: invention relates to a plastic edible composition ensuring a pleasant sensation in the mouth similar to that caused by chocolate melting in the mouth. The plastic edible composition includes: (a) starch blended with water at a weight ratio of starch to water 5:95 accordingly, at a temperature of 22°C the starch has viscosity from 0.03 to 2 Pa·s with a shear rate 10 sec-1, (b) a protein-containing component which essentially hydrates in water and does not coagulate, (c) a sweetener that, when essentially hydrated, is at least 90% free of crystals in the edible composition, (d) a fat-containing component which melts at a temperature of 45°C or less, (e) a gelating hydrocolloid agent facilitating formation of gel matrix which is destroyed at a temperature of 45°C or less and (f) an edible surfactant with HLB from 0 to 12. The edible composition has final moisture content 10 wt % - 50 wt % of total composition weight.
EFFECT: invention allows to produce a plastic edible composition ensuring chocolate sensation in the mouth but having lower caloricity in comparison with chocolate.
