SUBSTANCE: group of inventions relates to the manufacturing technique of dietary flour confectionary products for nutrition of diabetes patients. The methods envisage preparation of formula components, cutting of oyster plant, its drying in microwave field at specified parameters of process, frying and cryo-grinding in liquid nitrogen to produce flour. Then one undertakes production of dough from prime wheat flour, flour produced from oyster plant using described technology, yolks, salt, soda, vegetable oil, phospholipids and water taken as per specified ratio, its moulding in the form of sheets and baking. Vanilla is extracted by liquid nitrogen with corresponding miscella separation. Depending on the filling recipe girasol or girasol-sunflower or yacon or chicory or scorzonera or oyster plant or dandelion roots are cut, dried in the microwave field at preset process parameters, roasted, impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of raw materials and its cryomilling in medium of released nitrogen to produce flour. One mixes flour with culinary fat, sugar substitute "Sladeks" and waffle crumb to make filling; then one spreads the filling on the waffle sheets and cuts the later to produce waffles.

EFFECT: produced diabetic waffles have improved consistency and coffee taste and flavour with no coffee added to the formula.
