FIELD: food industry.
SUBSTANCE: one describes a colouring composition for products imitating crab meat which is produced in the form of an emulsion of the "oil in water" type. The composition includes a colouring component (carmine), at least one emulsifier with hydrophilic-lipophilic balance equal to 1-8. Additionally the composition includes a food solvent, a thickener, an antioxidant, a preserving agent and water. Additionally, one describes a method for production of the colouring composition by way of mixing the said colouring component with the said at least one emulsifier for "oil in water" emulsion formation.
EFFECT: invention ensures production of a colouring composition in the form of a stable emulsion with reduced carmine migration from the carmine-coloured layer into the uncoloured food product layer contacting it.
