FIELD: food industry.
SUBSTANCE: invention relates to food industry. The technological line for fruit chips production contains a washing machine, an inspection transporter, a calibrator, a machine for seed cell removal and fruits slicing, a sulfitator and an automatic packing machine. Additionally installed is a combined unit for moisture-and-heat treatment including four chambers, serially arranged and communicating: an IC chamber, a microwave chamber, a chamber for sugar syrup application onto the product surface and a pre-drying chamber. A transporter with meshed cassettes for fruit slices being treated hung thereon passes through all the four chambers. Installed downstream the machine for seed cell removal and fruits slicing is an orientation device for placement of fruit slices being treated into the meshed cassettes with the orientation device, the sulfitator and the combined unit for moisture-and-heat treatment are connected with a shared transporter.
EFFECT: proposed technological line enables the ready product quality improvement, faulty production elimination and raw material loss reduction.
