FIELD: food industry.
SUBSTANCE: invention is related to preservation industry. The method involves heating jars filled with pickled cucumbers in 70°C water during 7 minutes with subsequent transfer into 85°C water for 7 minutes. Then the jars are sterilised in 100°C water during 17 minutes. The jars are cooled in 80°C water during 9 minutes, then - in 60°C water during 9 minutes and in 40°C water during 9 minutes.
EFFECT: invention allows to save thermal energy and enhances the ready products quality due to reduction of thermal treatment duration.
