FIELD: food industry.
SUBSTANCE: invention relates to food industry. According to the proposed method, honey bee pollen is laid in a 7-10 mm thick layer and treated with IR-rays during 50-60 min in "heating-coiling" pulse mode corresponding whereto is radiation time amounting to 3-5 sec until honey bee pollen limit temperature (38-40°C) is reached. The radiation source is represented by KGT lamps with IR radiation wavelength band equal to 1.2-2.4 mcm and flux density amounting to 9-12 kW/m2.
EFFECT: proposed method reduces pollen moisture content from 20 - 30% to 8-10%, preserves 70-90% of biologically active substances with microbial and mould fungi population reduced from 105 to 103 CFU/g and from 102 to 101 CFU/g respectively.
