FIELD: food industry.
SUBSTANCE: invention relates to the food and starch industry. Modified starch producing method containing dextrinated polysaccharides involves forming a bed of feedstock, for example, native corn starch, on a pallet. After that the raw material is irradiated with infrared radiation generated by a KGT 220–1,000 lamp in a pulsed mode, until the starch granules destruction with partial dextrination to 40–43 mg of glucose per 1 g of dry matter. At that, the temperature inside the starch layer does not exceed 85–95 °C.
EFFECT: invention allows to achieve the starch dextrination, which facilitates its further enzymatic hydrolysis with production of glucose treacle.
