FIELD: food industry.
SUBSTANCE: invention is intended for usage in food industry for production of a packed concentrate in the form of jelly. The concentrate contains, wt %: water - 20 - 80, components imparting taste - 0.5 - 60, salt - 15 - 40 and a jellying agent (including xanthan and guar gum present in an amount of 20% - 80% in conversion to the total jellying agent quantity) - 1.0 - 4. The concentrate production method envisages ingredients mixing, the mixture filling into the package and the package closing. The heat treatment stage is performed before and/or in the process of and/or after filling into the package.
EFFECT: inventions ensure the concentrate quick dissolution in boiling water, the concentrate is in a minor way subjected to synaeresis during storage and highly stable during transportation and storage.
