FIELD: food industry.

SUBSTANCE: method envisages boiling a coffee batch with water, cooling the produced solution, filtration, during the solution production one takes a coffee batch with weight equal to 2.0-2.5 g and a water volume equal to 50-70 cm3; after boiling the solution is filtered through a decalcified folded paper filter preliminarily dried till constant weight, the produced sediment is dried in a drying oven at a temperature of 120-125°C during 1.5-2.5 hours till constant weight while the content of extractive substances in coffee is expressed according to their weight portion in the analysed coffee sample in terms of dry substance X, %; the weight fraction is calculated from the formula where m1 is weight of dried water insoluble coffee sediment, g; m is the weight of coffee batch dry substance, g.

EFFECT: analysis simplification, acceleration and accuracy improvement.
