FIELD: chemistry.

SUBSTANCE: described is a method of reducing content of acrylamide in heat-treated plant product, involving a step for reducing the level of asparagine in the plant used to produce the product, wherein the step for reducing the level of asparagine involves polynucleotide expression in the plant, where the polynucleotide contains at least one semantic and/or non-semantic sequence of the boisynthesis gene of asparagine or promoter thereof and an asparagine metabolism gene and a product obtained that way. Disclosed is a transgenic plant used in production of a product which accumulates a small amount of acrylamide or does not accumulate acrylamide at all during thermal treatment and which expresses a polynucleotide which contains a partial semantic and/or anti-semantic sequence of the biosynthesis gene of asparagine or a promoter or an asparagine metabolism gene. Described is an isolated polynucleotide capable of lowering the level of acrylamide in a plant. Disclosed is a method of producing an edible plant product from tissue of the disclosed transgenic plant.

EFFECT: invention enables to obtain food products with low content of acrylamide.
