FIELD: food industry.

SUBSTANCE: invention is intended for usage in food industry and relates to a method for generation of fume used for production of smoke-flavoured products. During the method implementation fume generation is performed by way of wood saw dust pyrolysis within a closed space restricted for access of oxygen. One performs continuous co-stirring of the saw dust and dispersed electrically conductive particles and filtration of a mixture of air and an inert gas through them. The inert gas used during fume generation is represented by nitrogen. It is produced by way of baromembrane separation of air on semi-permeable membranes under a pressure of 0.4-4 MPa. Input of energy to the wood saw dust is performed from the dispersed electrically conductive particles mixed with the saw dust which particles release heat as a result of their inductive heating under the action of alternating electromagnetic field.

EFFECT: invention ensures high smoke generation temperatures, exclusion of the wood saw dust inflammation danger as well as a high degree of fume formation and increase of fume density as a result of homogeneity, volumetric and targeted input of energy to wood saw dust particles.
