FIELD: food industry.
SUBSTANCE: installation contains a smoking chamber, a smoke generator, a system for smoke preparation and supplying, a condenser, a water ring pump and an ejector. The ejector passive nozzle is connected to the smoke generator via the smoke preparation system. The ejector mixing chamber is connected to the water ring pump via the recirculating pipe. In the smoking chamber one installs a header in the form of de Laval nozzle ensuring creation of a steam seal dividing the zones of the product supply into vacuum and the product smoking. A device (in the form of a co-extruder) for the product supplying into the smoking chamber is vertically positioned on the smoking chamber. The insert wherethrough an air-and-smoke mixture supply nipple is placed in the co-extruder base lower than the pumping screw in the central channel coaxially thereto. Additionally, a chamber with corona electrodes is installed in the air-and-smoke mixture supply system, the chamber inlet nipple connected to the ejector active nozzle. A dividing-and-packing device is installed directly after the de Laval header.
EFFECT: device increases the rate of smoking components sedimentation in the product pores, purifies smoke from cancerogenes and improves the ready product quality.
