SUBSTANCE: one extracts oats thermally untreated or treated at a temperature up to 100°C, with relative air humidity equal to no more than 16%, with fluid CO2 medium and/or CO2 and ethanol combination in a supercritical condition. One produces a defatted oat fraction and one or more fractions of oat oil. Oatmeal is produced by dry milling of the defatted oat fraction by way of crush milling into particles sized 1.0 - 3000 mcm. Oatmeal is separated into the first coarse fraction and the first fine fraction. The first coarse fraction has particles sized 160 - 280 mcm and contains a β-glucan concentrate in an amount of 12 - 50%. The first fine fraction has particles sized 4 - 80 mcm and contains a starch concentrate in an amount of no more than 65%. Separation is performed with application of one or more operations chosen from among sieving and air classification and, optionally, dry milling. One separates the first fine fraction into the second coarse fraction, the second fine fraction and the third fine fraction. The second coarse fraction has particles sized 80 - 120 mcm and contains a β-glucan concentrate in an amount of 25 - 60% The second fine fraction has particles sized 1 - 210 mcm and contains a starch concentrate in an amount of no more than 80%. The third fine fraction has particles sized 1 - 5 mcm and contains a protein concentrate in an amount of no more than 30%.
EFFECT: inventions group allows to manufacture a product with preservation of oat properties, molecular weight and other properties as close to natural ones as possible.
