FIELD: food industry.
SUBSTANCE: invention relates to preservation industry and may be used for compote preservation. The preservation method is as follows: before preliminary preparation and packing into jars berries are poured with 40°C water for 2-3 minutes. Then the water is replaced with a 60°C syrup; the jars are closured and put into the carrier ensuring mechanical air-tightness. One performs heat sterilisation involving sequential heating by way of staged showering with 70°C water during 5 minutes, with 85°C water during 5 minutes and with 100°C during 15 minutes with subsequent cooling by way of spraying with 80°C water during 6 minutes, with 60°C water during 6 minutes and with 40°C during 6 minutes; during the whole process of heat treatment the jar is turned upside down with a frequency equal to 0.166 s-1.
EFFECT: method ensures the ready products quality enhancement, the production process duration reduction, the technological cycle continuality with simultaneous reduction of heat energy and water expenditure.
