FIELD: food industry.
SUBSTANCE: invention relates to preservation industry, in particular, to grape compote sterilisation method. The jars are put into the carrier ensuring air-tightness. One performs the jars heating by way of sequential staged showering with 50°C water during 5 minutes, with 70°C water during 5 minutes, with 85°C water during 5 minutes and with 100°C water during 15 minutes by way of subsequent cooling by way of spraying with 80°C water during 6 minutes, with 60°C water during 6 minutes and with 40°C water during 6 minutes. During the whole heat treatment process the jar is turned upside down with a frequency equal to 0.166 s-1.
EFFECT: method ensures saving heat energy and water, the process duration reduction and the products quality enhancement.
