FIELD: food industry.
SUBSTANCE: oak concentrate production envisages pouring a powdery oak extract (with 6-8% moisture content and minimum content of resin and wax substances) with a water solution of acetic acid with 70-75 g/100 cm3 weight concentration of organic acids in conversion to acetic acid at a ratio of 10:1, stirring and maintenance during 6 days at the first stage. The concentrate is separated from the sediment, poured with a water solution of acetic acid with 50-55 g/100 cm3 weight concentration of organic acids in conversion to acetic acid at a ratio of 5:1, stirred and maintained during 5 days at a temperature of 45±5°C at the second stage. The concentrate is cooled and separated from the sediment.
EFFECT: extraction process acceleration, increase of extractive substances content in the concentrate and the concentrate yield enhancement.
