FIELD: wine-making industry. SUBSTANCE: oak powder-shaped extract with 5 - 7 % moisture content and with minimum concentration of resinous and waxen substances is flooded with water-alcoholic mixture of 65 - 70 vol. % strong in its ratio to powder-shaped extract of 10 : 1, kept for 7 days with periodical stirring. On the eighth day oak wine-making concentrate is poured off from settlings and sent to store. Settlings are flooded with water-alcohol mixture of 40 - 45 vol. % strong in its ration to settlings of (3 - 4) : 1, kept with periodical stirring for 5 days and on the sixth day wine-making oak concentrate is separated from settlings by decantation and sent to store. Settlings are again flooded with water-alcohol mixture of 20 - 25 vol. % strong in its ratio to 1 : 1, kept with periodical stirring for 2 - 3 day under temperature of 40 - 45 C, then after cooling wine-making oak concentrate is separated from settlings and sent to store. EFFECT: oak concentrate production method is used in wine-making industry.
