FIELD: wine industry.

SUBSTANCE: method for cognac distillate production consists in enriching the young distillate with components of oak wood, performing its thermal treatment and holding in contact with oak riveting, wherein its enrichment is carried out in a first container with oak wood chips in amount of 20–40 g/dm3, thermal treatment of young cognac distillate is carried out at temperature of 40–60 °C in second container with oak chips of weak, medium and strong calcination, treated with hot 5 % citric acid solution and 3 % hydrogen peroxide solution, with supply of oxygen and hydrogen peroxide thereto, and holding of thermally treated distillate is carried out for 1–36 months with supply of oxygen and hydrogen peroxide thereto.

EFFECT: invention allows to manufacture a product with high organoleptic and physical-and-chemical indices, enhance its consumer safety with simultaneous increase of maturing speed.
