FIELD: chemistry.
SUBSTANCE: invention relates to food industry. The disclosed method involves feeding a prepared mixture of 3-chloro-2-hydroxypropyltrimethylammonium chloride and sodium hydroxide into an aqueous suspension of starch, heating and holding the reaction mixture, neutralising, filtering, washing and drying the ready product. The starch suspension is prepared using water obtained from filtering cationic starch from the previous production cycle, in which the weight ratio of sodium chloride reaches 1.3% of the weight of the reaction mixture. The number of production cycles is such that the weight ratio of sodium chloride in the reaction mixture is 10% or higher, and the reaction mixture is heated to 45-55°C and held for 6-8 hours.
EFFECT: present method reduces consumption of reactants and time for producing cationic starch, increases efficiency of using the alkylating agent, and also reduces environmental pollution.
