FIELD: food industry.
SUBSTANCE: invention is intended for usage in preservation industry. The fish preserves production method envisages preparation of sauce and largehead hairtail. During the sauce production one performs recipe components preparation, bulb onions milling, sunflower flour pouring with drinking water and maintenance for swelling, the listed components mixing with tomato paste, drinking water, sugar, black hot pepper, allspice, cloves, coriander and laurel leaf, the mixture cooking and addition of acetic acid. During the fish preparation the fish is cut, maintained in salt solution, mealed in wheat flour and fried in vegetable oil. The largehead hairtail and sauce are packed, sealed and sterilised.
EFFECT: invention ensures reduction of the manufactured target product adhesion to container walls.
