FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Defatted milk is pasteurised at a temperature of 95-98°C, cooled and ripened with a kefir fungi starter. The produced milk is enriched with apple puree in an amount of 10% of the defatted milk weight and with stevia syrup in an amount of 3% of the starter weight. The fillers are simultaneously introduced into the ripened product. The beverage is cooled.
EFFECT: invention is aimed at enhancement of biological and nutritive value, improvement of organoleptic and physical-and-chemical indices of the ready product quality, the range expansion and storage life increase.
