FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to dairy production. The method envisages introduction of a starter with natural vegetal fillers into pasteurised milk. The vegetal fillers are represented by haw berries puree and stevia syrup.
EFFECT: invention allows to produce functional purpose biokefir with high nutritive and biological value, good organoleptic indices and increased storage life.
