FIELD: food industry.
SUBSTANCE: invention relates to a combined system for home or small-scale preparation of fermented alcoholic beverages such as beer and to such beverages preparation method. The combined system contains one tank designed so that to enable creation of pressure therein, the tank equipped with a means for the beverage natural saturation with carbon dioxide to the required level during fermentation, a means for collection and removal of any sediment inside the tank and for sediment removal from the tank while the tank is under pressure, a means for generation of pressurised gas for purposes of dispensing and maintenance of natural carbon dioxide saturation levels, s dispensing mechanism for draught beverage tapping. The tank is designed so that to enable connection to a temperature control system intended for selective control of the tank contents temperature at all stages of the beverage preparation. With the help of the combined systems one implements the stages of ingredients addition into the tank, selection of the required temperature and pressure, fermentation, natural saturation with carbon dioxide, cooling, sediment removal while the tank is under pressure, Introduction of pressurised gas to produce an alcoholic beverage wherein oxygen content is less than 30 ppb, the beverage remaining inside the tank until the beverage dispensing from the tank. The produced beverage has no undesirable after-taste as may be caused by oxidation reactions in the process of afterfermentation.
EFFECT: invention ensures arrangement of all the beverage preparation stages within one and the same space-efficient vessel, a low (up to 30 ppb) level of the beverage contamination with oxygen, reduction of the risk of the beverage spoilage as a result of contamination with bacteria or wild yeast, exclusion of beverage processing and transfer at afterfermentation stage, exclusion of the need for the beverage forced saturation with carbon dioxide, no need to transfer the contents through multiple tanks, reduction of decontaminating chemicals quantity, no need to store the beverage in bottles, the system application across a wide variety of climatic zones, possibility to produce a wide range of beverage types, beverage immediate dispensing from the tank into the glass, home beverage preparation taking 5-6 days, the required level of the beverage saturation with carbon dioxide ensured during the first 24 hours.
