FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages raw material defrostation, cutting into pieces sized no less than 5 cm with subsequent washing with 0.5% organic acids solution during 60-90 minutes. The treated raw material is blanched at a temperature of 75-80°C during 15 minutes. The produced semi-product is milled and packed.
EFFECT: invention ensures production of a structured semi-product.
