FIELD: food industry.
SUBSTANCE: invention concerns food industry, particularly preparation of food products, mainly to manufacturing of semiproduct from fresh peeled potatoes for public catering network and food-processing industry enterprises. Method includes preparation of raw materials treatment of potato with preserving solution such as citric acid with concentration till 1% and ascorbic acid with concentration till 1% in 1:1 ratio.
EFFECT: invention allows to prevent darkening of potato semiproduct and improve microbiological and organoleptic properties.
