FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to its preservation branch. The method envisages three-stage heating of jars with sweet cherry compote in water with subsequent three-stage cooling; the jars heating and cooling processes (apart from the last stages of heating and cooling) are performed simultaneously in the same baths. During the heat treatment process the jar is turned upside down with a frequency equal to 0.1 s-1.
EFFECT: invention ensures saving heat energy and water as well as the sterilisation process duration reduction and the ready product quality enhancement.
