FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to its preservation branch. The method envisages three-stage heating of sealed jars with sweet cherry compote in bathes with water with subsequent three-stage cooling; the jars heating and cooling processes (apart from the last stages of heating and cooling) are performed simultaneously in the same baths.
EFFECT: invention ensures saving heat energy and water as well as the sterilisation process duration reduction and the ready product quality enhancement.
