FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. The method envisages recipe components preparation, wheat bread soaking in milk and chopping, skin-off fish fillet chopping, the listed components mixing with part of salt and part of black hot pepper to produce fish mince. Bulb onions are cut and sauteed in vegetable oil; fresh white cabbages are chopped and frozen; lactic acid is mixed with bulb onions and cabbages to produce vegetable mince. Fish and vegetable mince are moulded in the form of rolls, mealed in bread crumbs and fried in vegetable oil. Wheat flour is sauteed; sunflower flour is poured with fish broth and maintained for swelling. Sunflower flour and wheat flour are mixed with sour cream, fish broth, the remaining salt and the remaining black hot pepper to produce a sauce. The rolls and sauce are packed, sealed and sterilised.
EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
