FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. The method envisages recipe components preparation, wheat bread soaking in milk and chopping, skin-off fish fillet chopping, the listed components mixing with part of salt and part of black hot pepper to produce fish mince. One performs bulb onions cutting and sauteing in vegetable oil, fresh white cabbages shredding and freezing, bulb onions and cabbages mixing with lactic acid to produce vegetable mince. Fish and vegetable minces are moulded in the form of rolls that are mealed in crumbs and fried in vegetable oil. Wheat flour is sauteed. Ground pumpkin seeds extraction cake is poured with fish broth, maintained for swelling and mixed with wheat flour, sour cream, fish broth, the remaining salt and the remaining black hot pepper to produce a sauce. The rolls and sauce are packed, sealed and sterilised.
EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
