FIELD: food industry.
SUBSTANCE: invention is intended for usage in preservation industry during pear and quince compote production. The method for sterilisation of compote in jars SKO 1-82-1000 envisages the heating process in an air flow at 130°C at a rate of 6 - 7 m/s during 25 minutes with subsequent maintenance during 18-25 minutes at heated air temperature equal to 95-100°C and cooling in an atmospheric air flow at 25-28°C at a rate of 7-8 m/s during 20 minutes. During the heat treatment process the jar is subjected to interrupted 2-3-minute turning upside down with a frequency equal to 0.166 sec-1 with a 2-3 minutes interval.
EFFECT: method ensures significant saving of thermal energy and water and preservation of biologically active components of the initial raw materials.
