FIELD: food industry.
SUBSTANCE: invention is related to preservation industry. After sealing the jars are installed into the carrier ensuring mechanical air-tightness of the jars and are subjected to staged heating in the first bath filled with 60°C water during 5 minutes with subsequent transfer into the second bath filled with 80°C water for 5 minutes and then - into the third bath with 90°C water for 12 minutes. Then the jars are cooled in the second bath filled with 80°C water during 5 minutes and in the first bath filled with 60°C water during 5 minutes where the next jars batch is simultaneously heated with further continuation of cooling in the fourth bath filled with 40°C water during 5 minutes. During the heat treatment process, the jar is turned upside down with a frequency equal to 0.12 s-1.
EFFECT: invention ensures the process duration reduction, the ready products quality improvement and saving thermal energy and water.
