FIELD: food industry.
SUBSTANCE: invention is related to confectionary products of preventive and dietary purpose. The aerated confectionary product with a low glycaemic index has a body made by way of aerated confectionary mass moulding. The aerated confectionary mass is produced of a composition contains, by way of substitutes, crystalline polyols and/or texturising property syrups of polydisperse hydrogenised sugars and/or of polydisperse hydrogenised sugars and non-digestible polysaccharides and/or syrups of non-digestible polysaccharides with intensive sweeteners, a jellying agent, a foaming agent and drinking water for the technological process implementation. The jellying agent used is represented by pectin. Pectin and the foaming agent are used at the following dry substance percentage ratio: pectin - 1.17-3.08, foaming agent - 0.52-1.12.
EFFECT: invention enables production of a ready product with a low glycaemic index due to complete replacement of sugar with polyols as well as extension of temperature and humidity storage conditions: at least 12 months at a temperature of 12-25°C and relative humidity up to 80% with the physicochemical and structural properties preserved.
