SUBSTANCE: method involves production of a cultured milk beverage based on a mixture of milk and milk whey with barley malt extract and a ripened starter consisting of L. bulgaricus, Str. thermophllus, Lc. lactis, Lc. cremoris, Lc. diacetylactis lactic acid bacteria.
EFFECT: invention allows to produce a beverage with high organoleptic indices, increased vitamin content, nutritive value, dietary properties and prolonged storage capacity.
