Pre-drying and smoking are performed at identical and constant rigidity of the mode. The mode rigidity is determined from the formula x p = t ¯ ( 1 ϕ ¯ / 100 ) , where t ¯ is the average temperature, °C; ϕ ¯ is the average relative humidity, %.

EFFECT: invention enables reduction of the quality of water sediment in the jar after sterilisation and to reduce the preliminary thermal treatment duration.
