FIELD: food industry.
SUBSTANCE: method involves impact of alternating rotating magnetic field on a fermented mass contained inside a tightly closed vessel, the field intensity within the treatment zone equal to 1x104 A/m-1x106 A/m with frequency amounting to 40-70 Hz. Ethanol accumulation occurs in the upper part of the vessel. The method is implemented with the help of a device containing a generator the closed rectangular magnetic circuit whereof is formed of working elements designed in the form of plates of a magnetically conductive material that are mated to each other. The plates form the closed rectangular circuit. Positioned inside the body of the individual plates forming the circuit are three coil blocks. Each of them is connected to the corresponding phase of the external three-phase electric power supply source. Made in one of the said working elements is a through slot for a vessel with a tight cover to be installed therein, the vessel containing the fermented raw material mass to be treated.
EFFECT: decrease of direction and reduction of energy intensity of alcohol production process.
