FIELD: food industry.
SUBSTANCE: invention relates to a boneless meat semi-product defrosting method envisaging the semi-products heating till the temperature inside the semi-products is equal to 1°C. The method is as follow: in the process of defrosting the semi-products are heated in the microwave field till the temperature inside the semi-products is equal to minus 2-3°C and are maintained at the said temperature during 4-10 hours.
EFFECT: method allows to reduce meat juice losses during defrosting.
