FIELD: meat industry, in particular, production of minced composite half-finished products from frozen meat blocks. SUBSTANCE: method is carried out by grinding frozen meat blocks, and introduction of sodium chloride and milk protein. Defrosting of meat blocks is performed in vacuum. EFFECT: broadened assortment of products from meat raw material; increased qualitative characteristics and microbiological index of product.
