FIELD: food industry.
SUBSTANCE: invention relates to food industry. The proposed device contains a kneading channel (12) extending with tilt downwards from the upstream-positioned inlet end (23) that is open for receipt of cheese clot to be kneaded towards the downstream-positioned outlet end (24) open for cheese clot discharge. A pair of opposite augers (14, 16) are rotationally installed side by side in the kneading channel (12), operatively connected to the drive means (18) for rotation in opposite direction and cheese clot movement towards the downstream-positioned end (24). The first stem injection means (25) opens into the kneading channel (12). The kneading chamber (27) with submersible levers is positioned at the outlet end of the kneading chamber (12) for receipt of cheese clot being discharged from the channel (12).
EFFECT: invention ensures exclusion of loss of water used during kneading, preservation of all nutrient substances and elimination of potentially contaminating production wastes.
