FIELD: food industry.

SUBSTANCE: invention relates to the dairy industry, in particular to a method for producing a string cheese product. Method includes: a) preparation of raw material for cheese with a mass fraction of cheese not less than 50 % by weight; b) heating, kneading and drawing the cheese material and obtaining a cheese mass; c) forming hot cheese mass; d) cooling the cheese mass, cooling the hot cheese mass without contacting the salt water. In this case, before and/or during step b), whey and/or milk protein is added, wherein the weight ratio "whey protein/casein" in the cheese mass is set to a value of less than or equal to 1:20, the weight fraction of the protein-containing raw material based on the cheese mass is from 0.5 to 7 % by weight, step b) is carried out at a temperature of from 60 °C or higher and before, during or after step b) salt-melting agents are not added, and the raw material for the cheese contains a cheese bunch with a mass fraction of less than 20 % by weight.

EFFECT: method makes it possible to obtain a product with high heat resistance, optimal fusibility and a natural taste sensation, and combine the texture properties of the "Filat paste" type cheeses with flavor variants of the cheeses ripe with bacteria.
