FIELD: food industry.
SUBSTANCE: jars filled with compote are put into the carrier providing for air-tightness. Then one performs compote heating in 150°C air flow at a rate of 8-9 m/s during 10 minutes. The jar is turned upside down with a frequency equal to 0.133 s-1 with subsequent maintenance at a temperature of 92-95°C during 25-30 minutes while the jar is in a static state. One performs the jars cooling in 25-28°C air flow at a rate of 7-8 m/s during 15 minutes, the jar is turned upside down with a frequency equal to 0.133 s-1.
EFFECT: invention ensures significant thermal energy and water saving.
